dough:

- 2 1/4 tsp active dry yeast 1 packet
- 1/4 cup honey
- 4 tbsp unsalted butter melted
- 1 large egg room temperature
- 3 1/2 cups all-purpose flour
- 1 tsp salt
- 1/2 tsp ground cinnamon
- 1/4 tsp ground cardamom
filling:
- 2 ripe Bartlett or Bosc pears peeled and diced
- 2 tbsp unsalted butter
- 2 tbsp honey
- 1/4 cup brown sugar
- 1 tsp ground cinnamon
- 1/2 tsp ground cardamom
- 1/4 tsp allspice
glaze:
- 1/4 cup unsalted butter
- 1/4 cup brown sugar
- 2 tbsp honey
- 2 tbsp pear juice
Instructions
make the dough:
- in a large bowl, combine warm milk, yeast, and honey. let sit for 5–10 minutes until frothy.3/4 cup oat milk, 2 1/4 tsp active dry yeast, 1/4 cup honey
- add melted butter and egg, whisking until smooth.4 tbsp unsalted butter, 1 large egg
- gradually add flour, salt, cinnamon, and cardamom. mix until a soft dough forms.3 1/2 cups all-purpose flour, 1 tsp salt, 1/2 tsp ground cinnamon, 1/4 tsp ground cardamom
- knead on a floured surface for 8–10 minutes, or until smooth and elastic.

prepare the filling:

- pour into a greased 9×13-inch baking dish and arrange thin slices of pear on top.
assemble the buns:
- roll out the dough into a 12×16-inch rectangle. spread the cooled pear filling evenly over the dough. sprinkle with nuts, if using.
- roll the dough tightly from the long side into a log. cut into 12 even slices.
- place the buns cut-side down in the prepared dish. cover and let rise for 30–40 minutes.
bake:
- preheat oven to 350°F. bake buns for 25–30 minutes, or until golden brown.
- let cool for 5 minutes, then invert the pan onto a serving platter to reveal the caramelized pear topping.
