Ingredients

dough:

  • 3/4 cup oat milk 110°F, warm
  • 2 1/4 tsp active dry yeast 1 packet
  • 1/4 cup honey
  • 4 tbsp unsalted butter melted
  • 1 large egg room temperature
  • 3 1/2 cups all-purpose flour
  • 1 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground cardamom

filling:

  • 2 ripe Bartlett or Bosc pears peeled and diced
  • 2 tbsp unsalted butter
  • 2 tbsp honey
  • 1/4 cup brown sugar
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cardamom
  • 1/4 tsp allspice

glaze:

  • 1/4 cup unsalted butter
  • 1/4 cup brown sugar
  • 2 tbsp honey
  • 2 tbsp pear juice

Instructions

make the dough:

  • in a large bowl, combine warm milk, yeast, and honey. let sit for 5–10 minutes until frothy.
    3/4 cup oat milk, 2 1/4 tsp active dry yeast, 1/4 cup honey
  • add melted butter and egg, whisking until smooth.
    4 tbsp unsalted butter, 1 large egg
  • gradually add flour, salt, cinnamon, and cardamom. mix until a soft dough forms.
    3 1/2 cups all-purpose flour, 1 tsp salt, 1/2 tsp ground cinnamon, 1/4 tsp ground cardamom
  • knead on a floured surface for 8–10 minutes, or until smooth and elastic.
  • place dough in a greased bowl, cover, and let rise in a warm spot for 1–1.5 hours, or until doubled in size.

prepare the filling:

  • in a skillet, melt butter over medium heat. add diced pears, honey, brown sugar, cinnamon, cardamom, and allspice. cook until pears are tender and the mixture is thickened (about 5 minutes). cool.
    2 ripe Bartlett or Bosc pears, 2 tbsp unsalted butter, 2 tbsp honey, 1/4 cup brown sugar, 1 tsp ground cinnamon, 1/2 tsp ground cardamom, 1/4 tsp allspice

make the glaze:

  • in a small saucepan, melt butter with brown sugar, honey, and pear juice. simmer for 3–4 minutes until thickened.
    1/4 cup unsalted butter, 1/4 cup brown sugar, 2 tbsp honey, 2 tbsp pear juice
  • pour into a greased 9×13-inch baking dish and arrange thin slices of pear on top.

assemble the buns:

  • roll out the dough into a 12×16-inch rectangle. spread the cooled pear filling evenly over the dough. sprinkle with nuts, if using.
  • roll the dough tightly from the long side into a log. cut into 12 even slices.
  • place the buns cut-side down in the prepared dish. cover and let rise for 30–40 minutes.

bake:

  • preheat oven to 350°F. bake buns for 25–30 minutes, or until golden brown.
  • let cool for 5 minutes, then invert the pan onto a serving platter to reveal the caramelized pear topping.
