Ingredients

  • 1 cup unsalted butter softened
  • ½ cup powdered sugar
  • 2 egg yolks large
  • 1 teaspoon vanilla extract

  • 2 teaspoons matcha powder culinary-grade
  • ½ teaspoon baking powder
  • ¼ teaspoon salt

  • ½ cup dulce de leche
  • 2 oz white chocolate finely chopped

Instructions

  • beat butter and powdered sugar until creamy (2 min), then mix in egg yolks and vanilla.

  • in another bowl, whisk flour, cornstarch, matcha, baking powder, and salt.

  • gradually mix dry ingredients into the butter mixture until a soft dough forms.
  • shape dough into a disc, wrap, and refrigerate for at least 1 hour (up to 24 hours).
  • heat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • roll dough to ¼-inch thick on a floured surface, then cut into 2-inch circles.
  • place on the baking sheet 1 inch apart and bake for 10–12 min until set but pale. cool on the pan for 5 min, then transfer to a rack.
  • melt white chocolate, then stir in dulce de leche until smooth. let cool until spreadable.

  • spread 1 tsp filling on a cookie’s flat side, then sandwich with another cookie. repeat.
  • dust with powdered sugar, drizzle with white chocolate, or sprinkle with matcha powder.

store in an airtight container at room temperature for up to 3 days or refrigerate for up to 1 week.
